Allow returning only certain keys with Realtime

When you use Realtime (via the React hooks package or the SDK) you get all the data about the run back. It would be useful to be able to optionally select only the columns you want, or possibly the opposite and exclude columns.

For example, you don’t want to return the costInCents and baseCostInCents columns because your users could read the data in their browser.
